The Royal Mail , together with Fowles Wine, present our venison masterclasses. It's your chance to taste, talk, try and learn as our experts share their passion for whole beast cooking and wines matched to game meat.

Over the course of three hours, a whole venison will be broken down into proscuitto, bacon, sausages and salami, along with a discussion on matching wines with games meats.

Grazing foods with be served throughout, with a main course of venison. Matching wines will be provided by Fowles wine.

Our chefs will demonstrate breaking down a whole side of beef in the  prime cuts - ribeye, porterhouse and rump.  They will guide you through the dry ageing process, the history and rise of the supermarket and the differences between grain and grass fed beef.

Learn the art of pork butchery and charcuterie with our Royal Mail Pork Butchery and Charcuterie Masterclass.

Our chefs will demonstrate breaking down the whole beast into the legs, shoulder, belly and loin.  They will then use the cuts to demonstrate various charcuterie processes, inlcuding fresh sausages, salami, pancetta, bacon and proscuitto.

As you learn you will enjoy a 3 course meal with matching wines, featuring our slow roasted pork shoulder.

Diners will enjoy dry aged Gippsland roast beef with matching wines, a demonstration of breaking down an argentine of beef, plus a discussion on the Gippsland region and its impact on the produce.

The Royal Mail on Spencer and Lightfoot & Sons present Terroir v Terroir featuring dry aged beef matched to wines from the Gippsland region - a special event to highlight how the produce takes on the flavours of the environment.

Michael Hermans from the Royal Mail on Spencer will demonstrate breaking down a whole argentine of beef into prime cuts. Rob Lightfoot from Lightfoot & Sons will host a discussion on the terroir of the Gippsland region and their wines.

Diners will enjoy dry aged Gippsland roast beef, with samples of the 21, 28, 35 and 42 day rump, with matching wines from Lightfoot & Sons.
